Last Sunday I finally had the chance to brunch at Inn Of The Seventh Ray, a woodland restaurant in the hills of Topanga Canyon. This restaurant has been on my radar for years, mainly because of it’s mystical fairy garden setting which reminds me of a blend between Rivendell and The Shire. Say no more.
The menu is quite elaborate, especially for a restaurant that prides itself on using all organic, farm fresh and local ingredients. They have a brunch buffet that would please vegetarians and carnivores alike with over 30 items offered that range from vegan quinoa scones to chipotle BBQ chicken and all you can eat Alaskan King crab legs. Though I admit I was tempted to take the gluttonous route, I had my eyes set on something far less extravagant. Warm brown rice. Yes it sounds boring, maybe even elvish, but the envy that arose from my fellow companions upon its arrival was orc like.
This dish has everything I love. Rice, avocado, seaweed, sesame seeds, garlic, braggs and onions! It’s simple, healthy, super easy, and quick to make at home. Adding a piece of protein on top turns this recipe into a one pot wonder! And if you don’t know what Braggs is, it’s a healthier version of soy sauce, and you’re welcome.
Fairy Garden Brown Rice
2 cups cooked brown rice
6 scallions chopped (light green and white parts only)
1/4 cup garlic chips (store bought or super simple recipe here)
Mirin rice wine vinegar
Braggs liquid amino acid to taste
Furikake seasoning to taste
Protein of your choice (optional)
Split the rice into two bowls. Top each with avocado, chopped scallions, and garlic chips. Add 2 tablespoons to each bowl of both mirin and braggs. Taste and add more if desired. Top with lots of furikake and enjoy!
